Honey Pop

As the seasons transition, I wanted to find a rum cocktail that was the perfect bridge between summer and fall. A play on the Mojito, yet inspiration by the Dark and Stormy. Enter the Honey Pop! The honey gives this cocktails a more natural flavor which I love. I use local Chestnut Hill, MA honey spun by a close friend of mine! Floral honeys are perfect for this cocktail too. You can include a mint garnish if you choose, I tend to leave it out. Break out this cocktail for a celebration, it pairs perfectly with hydrangeas!

Ingredients

  • 2 oz white rum (highly recommend Privateer's White Rum)
  • 1 oz honey syrup (equal parts of honey and water, melt together and cool before use)
  • 1 oz lime juice (fresh squeezed of course)
  • Crushed ice
  • Champagne
  • Lime wedge

Directions

  1. Mix first three ingredients.
  2. Pour over crushed ice.
  3. Top with champagne.
  4. Garnish with lime wedge.
  5. Enjoy!
